Omar Morales has a degree in Gastronomy by the “Higher Colleges of Gastronomy” of Mexico - the first Latin America gastronomic university. In 2004 he leaves Mexico, his native country, and settled in Catalonia, which complements his training at the School of Hostelry and Tourism of Cambrils and approves his studies with the Bachelor of Science and Food Technology of the University of Barcelona.
He has been a student of the Chair Ferran Adrià at the University Camilo Jose Cela in Madrid and he participated in numerous training sessions with gurus of world cuisine as Albert Adrià (elBulli), Ferran Adrià (elBulli), Alain Devahive (elBulli workshop) Oriol Balaguer, David Inglada (Solé Graells), Enric Rosich, Joan / Josep and Jordi Roca (El Celler de Can Roca), Quique Dacosta, Pascal Barbot, Pierre Gagnaire, Michel Bras, Seiji Yamamoto, Andoni Luis Aduriz, Grant Achatz, René Redzepi (Noma), Juan Mari and Elena Arzak and Oliver Peña (41 th Experience). He also participated in professional stages with proposals of high gastronomic level.
In Tarragona, he was chef at L'Amagatall restaurant, between 2004 and 2008, and Executive Chef and of the Hotel SB Ciutat de Tarragona from 2008 until today.
It has built in the restaurant of the Hotel Hostal Sport of Falset as Executive Chef with the will to renew the local cuisine and make it up to the great wines of the Priorat region.
